Meet Laura - Senior Assistant Manager at Fazenda Manchester

This week we sat down with Laura, one of our Senior Assistant Managers at Fazenda Manchester, and talked about her journey with us at Fazenda, hospitality, advice and more, so you could get to know her a little better.

Tell us your Fazenda Story...

My journey with Fazenda started back in 2018, returning to the North-West after a few years living in Newcastle. I stumbled upon the Supervisor role at Manchester, and despite not knowing much about the brand, I decided to apply. The company values are something that really drew me in; I felt like they aligned with my own and the Team seemed genuinely happy, so I went for it.

Initially, stepping into my role at Fazenda was definitely overwhelming. The Team operated like a well-oiled machine, creating a warm atmosphere by being knowledgeable and comfortable with guests – and with an infectious enthusiasm for Picanha. I wondered how I would measure up to their energy and hospitality. I soon realised that it was absolutely possible through our mutual goals and passion to make our guests feel special. I embraced this and relaxed into my role, and not long afterwards I was promoted to Assistant Manager.

My time at Fazenda has awarded me with so much enjoyment and fantastic opportunities, like earning my WSET Level 2 certification and a memorable trip to Valdobbiadene, which was full of delightful Prosecco tastings.

Cue 2020, when Covid struck and we were in and out of national lockdowns. It was a challenging period, particularly coupled with welcoming my daughter into the world, which meant I had quite some time away from the company. Returning in 2021 felt almost like a reset: there were many new faces, a brand new menu to learn, and a big shift in pace to adjust to.

However, I soon found my rhythm again and in the following year, I stepped into the role of Senior Assistant Manager. I truly love this position and feel very grateful to my Team for unwavering support they have guided me with.

What is your favourite aspect within hospitality?

Without a doubt, our guests! They are the heartbeat of what we do. I especially love seeing familiar faces; it's like greeting old friends. Some guests celebrate their birthdays with us every year, while others drop by weekly for a catch-up, always ready to share their latest stories. It is so fulfilling to see guests creating their own traditions and being a part of that.

One of the most rewarding parts of the job is watching families grow over the years. We've seen couples on first dates who later return for engagements, weddings, and eventually bring their children along. Being a part of these special moments and milestones in the lives of our guests is a privilege.

Each visit tells a story. Whether it's a quiet dinner for two or a boisterous family gathering, knowing that we play a role in creating lasting memories is incredibly rewarding.

What is one piece of advice you were given you would never pass on?

"Fake it until you make it."

This advice has always seemed impractical to me, especially in hospitality. Authenticity is crucial in this industry. If we're not true to ourselves, our talents, and our limits - how can we ever hope to grow? Guests can always sense when you're not genuine, and your Team needs to trust and rely on you. I'm a firm believer in being true to yourself and acknowledging your limitations.

Asking for help and speaking up when you don't understand something is how we learn and improve. There's no shame in it. This approach has served me well throughout my career at Fazenda. It's allowed me to learn from my team, grow in my role, and provide a better experience for our guests.

Favourite way to unwind after a long day?

Unwinding for me looks like spending time in my garden. I love growing vegetables, digging up potatoes, relocating caterpillars from my broccoli, or singing to my strawberries (it really does help them grow faster - trust me!).

Gardening is the perfect way to relax after a busy shift for me, because it's so different from the fast-paced environment of the restaurant. Out in the garden, things move at nature's pace. So when I'm not at work, you can usually find me out there!

Last book you read and loved?

Lessons in Chemistry - Bonnie Garmus

I feel like I was a little late to the party with this one, but I've now finished it and what a treat! I laughed, I cried, I was tempted to go out and buy a Bunsen burner...

I urge anyone to read it, especially anyone who has ever underestimated the power and determination of women!

Favourite menu item and cocktail or wine?

I find myself indulging in one of the newest additions to our menu, Croquetas De Asado. They're irresistibly delicious and I always recommend them. As for a drink, I will always choose a Caipirinha cocktail. Our Manchester Bar Team make the best in the city after all!
